Cryocream

Ice cream, you scream, we all scream for Cryocream!

Recipe

  • 1 liter of heavy cream
  • 1/2 liter milk
  • Hershey Chocolate Syrup
  • 1/2 cup sugar
  • 4-5 liters of liquid nitrogen

Directions

Mix everthing in a stainless steel bowl. Do not use anything that will crack under liquid nitrogen. Use a wooden spoon to stir. Mix and taste. It should taste good, i.e. bad for your diet... think about the movie Chocolat. I am sure Juliette Binoche (or Johnny Depp) would approve this recipe. Slowly mix liquid nitrogen. Use gloves and eye protection. It does get cold. Mix until you have a creamy ice cream, Carvel-ish, or keep it going until you have a Cassata-like consistency. The next step is to eat. This stuff is good. Half and Half also works, but the heavy cream version got better reviews. If the mix is too hot it will "boil" and make a lot of nitrogen bubbles.

I add some more Nitrogen (takes 4 or 5 times since the nitrogen boils off very rapidly).
if the ingredients are too warm(like in this outdoor attempt) the nitrogen will boil very violently.
